How do you switch things up at breakfast? I used ingredients that I had on hand already and "assembled" a very familiar quesadilla into a breakfast hit! I popped them in the oven to crisp up the tortilla, so easy. Serve with fresh seasonal fruit and you have covered all the food groups.
